Mushrooms have a delightfully hearty and satisfying way about them. This is a great dish when transitioning from a meat eating diet.
2-3 cups portobella mushrooms chopped and marintaed in:
1/4 cup nama shoyu or gluten free soy sauce
1/4 cup oil
1/2 teaspoon thyme
Marinade for at least 1 hour longer if you have the time.
3 cups water
1/2 cup olive oil
1 cup walnuts
2 cloves garlic
1 teaspoon sea salt
Blend water, oil, walnuts, garlic and sea salt until smooth. pour over marinated mushrooms. Enjoy. Makes 4 servings.
