I think cabbage gets a bad rap as a "poor mans meal." Yes, it is inexpensive, but when you think about it, what's not to Love about this awesome vegetable. it's high in fiber, vitamin C and is great for the colon. It can be made into a wrap (cabbabge rolls), it can be shredded raw (cole slaw), and it makes a kickin' stir fry. Here's one of my "go to" favorites when I have a lot of veggies in the fridge and I need to use them before they expire...
Veggie Stir Fry
1 small head of cabbage, rough shredded
various veggies: carrots, bell peppers, zuchinni, yellow squash, sweet onion, etc.,
chopped into small, bite sized pieces
2 Tablespoons fresh garlic, minced
2 Tablespoons, fresh ginger, minced
2 tablespoons cooking oil, sesame for more flavor
1/8-1/4 cup soy sauce
Heat Wok or dutch oven, add oil. When oil is hot add garlic and ginger, tossing until aromatic. Add veggies and toss until tender but still a little crunchy. Sprinkle with soy sauce, cover to steam until desired consistency.
Serve with rice and your favorite protein.
